As you may have noticed, I’m a huge fan of brunch but not so keen on the early morning before work breakfast. Lately, however, I have been trying to change my ways and start off the day right with a quick savory bite. I’ve found that I feel more energetic and satisfied (aka. no snacks) all the way until lunch.
This tasty egg sandwich takes about as long to make as it does to eat. One toasted deli flat (those little 100 calorie breads), a fried egg with a slice of swiss melted atop and a little arugula. Pile it together, add some ketchup or salt and pepper if you wish, and sit for a moment or two to gobble it down before leaving for work.
